The Ultimate Guide to Choosing the Best Milk for Your Coffee in India

What is your customer actually drinking in a cappuccino? About 36 g is espresso; the rest of the 200 ml cup is milk. So the milk you buy shapes the drink more than almost anything else on your bar.
Our short answer: use full cream milk with at least 6% fat. Amul Gold is the easiest to find across India, and it costs only ₹2 to ₹3 more per cup than toned milk. Here is each option, and the Indian brands worth buying.
1. Full cream milk: the one to use
Silky foam. Protein traps the air; fat makes the foam glossy, so it folds into the espresso and pours clean latte art.
Sweeter cups. Warm full cream milk tastes naturally sweet, so a good cappuccino needs no sugar.
More forgiving. A slightly over-aerated jug still pours well, so new baristas get good cups sooner.

Amul Gold is our pick. It is consistent across India, and it is the milk we use to taste our own coffees in milk.
Nandini is the value choice in Karnataka. Its popular Shubham pouch is about 4.6% fat, so ask for its richest variant and check the fat on the pack.
Aavin Premium and Mother Dairy Full Cream are good regional equivalents. Akshayakalpa is organic, at about twice the price.
3. Toned and skimmed milk: cheaper, but you can taste it
The FSSAI sets five milk grades. The foaming protein sits in the solids-not-fat (SNF), which barely changes between grades. The fat is what changes.

Toned milk, such as Amul Taaza at ₹58 a litre, saves only about ₹2.40 a cup. It foams, but thinly, and turns bubbly if over-aerated. Skimmed milk makes a stiff foam that sits on the coffee like a cloud and tastes of very little, so keep it for customers who ask.
4. Oat milk: the best plant milk
Buy a barista blend. Barista oat milks (So Good, Oatly, Alt Co., Milklab) have added protein and fat, so they steam much like dairy. Regular oat milk usually won't.
Price it separately. So Good Oat Barista costs about ₹242 a litre, or ₹48 of milk per cup, around three times Amul Gold. If the difference is ₹25 or more per cup, add a surcharge.
Soy is the next best for hot drinks. Almond and coconut foam poorly, so save them for iced drinks.
Is full cream worth the extra?
On a ₹180 to ₹250 cappuccino, moving from toned to full cream costs about 1% of the price, and customers taste the difference. See our café coffee cost per cup guide for the rest of the sum.
Key tips for any milk
Stop at 55 to 65°C. If you burn the milk, it smells cooked and loses its sweetness, and customers often blame the coffee. Our guide to bitter or sour espresso explains why.
Never re-steam. Pour only what you need, and start fresh each time.
Taste your coffee in your milk. Chocolate, caramel and nutty coffees hold up best, which is why we roast Caramel Espresso and Toasted Almond for milk drinks. Our Café Sampler lets you try two to four of them in your own cups.
Common questions
Is Amul Gold good for coffee?
Yes. Amul Gold is full cream milk with 6% fat and 9% solids-not-fat, the right range for cappuccinos, lattes and flat whites. It steams into silky, sweet microfoam, is consistent from city to city, and costs only ₹2 to ₹3 more per cup than toned milk.
Is Nandini or Amul better for coffee?
Both make good coffee in their full cream versions. Amul Gold is 6% fat and the same across India, so it is the easiest to standardise on. Nandini costs less in Karnataka; ask for its richest variant and check the pouch, since its popular Shubham milk is about 4.6% fat.
Can you make latte art with UHT or tetra pack milk?
Yes. UHT tetra milk keeps for months unopened and still steams into microfoam that pours latte art, so it is a useful backup. Fresh pouch milk tastes cleaner and foams more stably, so use it every day and keep tetra for emergencies.
Which plant milk is best for coffee in India?
A barista-blend oat milk, such as So Good Oat Barista, Oatly, Alt Co. or Milklab, is best for hot drinks because it steams much like dairy. It costs about three times as much per cup as Amul Gold, so price oat drinks separately. Almond and coconut suit iced drinks.
